Peach Pie Recipe

During hurricane Irene we decided that we should do some cooking, baking and of course… eating.  Because of all of the flooding, we had to use what we had in the house.  This can sometimes be a challenge.  With 4 kids, the fridge never has what I need, when I need it.  I often have to run out and buy one thing for a recipe, if not more.  So it was a miracle that we were able to pull anything together.  We researched a lot trying to find a great recipe that we had all of the ingredients for.  We discovered a recipe for, “Simple Peach Pie” which was just that!

History of the recipe:

As we all know each recipe has a history.  I was lucky enough to find this peach pie recipe on food.com.  The history does not stop there though.  I found it interesting that the person who posted this recipe found it at their local far.  When buying peaches at Lynd’s farm they were given this recipe for simple peach pie.  I would love to know where the Lynd’s got the recipe but we may never know!  Either way this is a simple, delicious peach pie… so thank you to Lynd’s Farm and thank you to whom ever posted this post on food.com

Recipe:

Serves: 8

Prep time: 15-20 minutes

Baking time: 35-45 minutes

 

I ngredients:

Pastry for a double-crust pie *need a pie crust recipe?  Click here

5 C. Fresh Farm Peaches, sliced ( this was about 6 average sized peaches)

1 C. Sugar (you can substitute Splenda for dietary purposes)

1/3-1/2 C. all-purpose flour (we used 1/3 C. but I would suggest more if you are looking for your peach pie to be less runny)

1/2 tsp. Cinnamon

2 TBSP. Butter

2 TBSP. Sugar

Instructions for Peach Pie:

  1. Preheat oven to 425 degrees F.  Remember Preheating takes about 10 min.
  2. Stir together flour, 1 C sugar and the cinnamon and set to the side.
  3. Wash, peel, and slice your peaches.
  4. Mix peaches with dry ingredients for an even distribution.
  5. Turn mixture into pasty lined pie plate
  6. Cut up butter and evenly place over pie filling mixture.
  7. Cover with top pie crust, cut slits and seal the edges with either your fingers or a fork.
  8. Place foil over pie edges to assure that they do not over brown.
  9. Bake for 20 minutes
  10. remove foil from edges and bake for an additional 15-25 minutes.
  11. Pie is cooked when crust is brown and juice begins to bubble through the slits in the crust.

I hope that you enjoy this peach pie as much as we did.  Rob was happy that it was not “slimy” as other peach pies can be.  It was fresh, delicious and best of all… easy to make.  This pie can be frozen for future use after it is cooks.  We are thinking about making another one and freezing it until late fall when you want a taste of

summer back!  One more great thing about this peach pie is that it is only 191 calories per serving.  So you can have a slice of peach pie with minimal guilt with most weight loss plans!

Grandma’s Magic Cookie Bars

Another favorite in our family are magic cookie bars.  They have a special grandma touch that makes them extra gooey!  Magic cookie bars are sure to please everyone young and old!  Here is what you will need to do to make Grandma’s Magic Cookie Bars:

Ingredient:

1/2 Cup of Butter

1 and 1/2 Cups graham cracker crumbs

1 and 1/2 (21 oz.) cans of condensed milk

2 Cups Semi-Sweet Chocolate Chips

1 and 1/3 Cups of flaked Coconut

1 Cup Chopped Nuts

Directions:

  1. Preheat your oven to 350 degrees (325 degrees for a glass dish)
  2. Melt butter
  3. Pour the butter into a 13×9 inch pan
  4. Add crumbs over the butter
  5. Pour the milk evenly over the crumbs
  6. Layer remaining ingredients evenly
  7. Press down firmly with a fork
  8. Bake at 350 degrees for 25 minutes or until you notice a slight browning of the magic cookie bars.
  9. Chill in the pan over a cooling rack
  10. Cut into bars and serve

One thing to note is that this recipe calls for more condensed milk than other recipes.  It makes the magic cookie bars extra gooey.  If you wish to have a drier bar only use 1 (14 oz.) can of milk.

Christmas Countdown 2010

50 Days Until Christmas 2010

So here we are!  Welcome to the 2010 Christmas Countdown.  I am so excited to be sharing the holiday season with you for the third year in a row!  This time of year can be busy and stressful but we will get through it together.  Here is a taste of what we have in store this year!

  1. Cookies:  Every day I will be posting one of my favorite holiday cookie recipes.  Nothing says Christmas like cookies!  I am hoping the husband can get a rate that cookie system up and running in the next few weeks.  Remember that many cookies freeze well.  It is not to early to begin baking your Christmas cookies!
  2. Homemade Holiday:  This year we are doing something extra special. Stay tuned for this exciting, money saving tip.
  3. Christmas Budget:  I know it is that B word again!  I think that it is important to know how much money you will have available to you this holiday and try to spend only cash.  Times are hard and digging a deeper hole is not advised.
  4. Christmas Movies:  If you are wondering when your beloved Christmas movie will be on… Stay tuned to Ask Becca!  I will let you know what will be on and when.  I know that I hate missing “It’s A Wonderful Life” and “Miracle on 34th Street“.   As soon as I hear about it I will let you know!
  5. Christmas Traditions:  I know that every family has their own traditions and I would love to hear about them!  I think that it is important to celebrate your traditions and perhaps steal a few to make your own.
  6. Fun:  We all know that with Christmas comes fun times.  Parties, caroling, the Christmas at Church and day trips for the family.

This is not all.  It is just a sweet taste of what is to come in the next 50 days!  So off we go… 50 Days of Christmas really means 48 Shopping Days remaining.  Have fun and remember when you need a laugh, idea or break… stop by and say hi!

Hurricane Grill and Wings

I am so excited that Hurricane Grill and Wings has come to the area.  Although their new location in Hartsdale is about an hour away we will still make the trip!  Here are some things that I love about Hurricane Grill and Wings:

  • Of course the wings are great!  Why else would they include wings in their title?  I can taste them already!
  • It is a family friendly atmosphere and the kids love going to the Hurricane Grill and Wings!  They have a great kids menu and Abby loves the Grouper.  With a price of $4.95 you cannot go wrong!  That includes your kids drink as well as a side.  There are healthy sides such as applesauce, salad and even celery sticks.  Of course they have french fries as well but I love it when my kids pick the healthy options.
  • I love the rewards program.   If you sign up online you get $10 off the bat for your first trip!  You also will earn one point per every dollar spent.  But wait… there is more… there are double points on your first visit and double points on Mondays.  Once you hit $100 on your rewards card you get $10 off of your next visit.  It is a wonderful way to go out and still save some.  I know with the holidays coming we will be going out on shopping trips and I will be stopping at the Hurricane Grill and Wings!
  • The Salmon Caesar Salad.  Nothing is better then a generous hunk of salmon on a salad… I love it!

Weight Loss: Day 4

I had another wonderful day on my weight loss journey again.  I am sure that you are all getting a little tired of hearing about it but it went quite well.  I was serious about exercise today and walked outside in the 15 degree weather again.  I took the older two girls with me and we had a nice time.  We walked a little more then a mile together.  In addition to that I did the Wii fit for 45 minutes today and burned 385 calories.  I had a shake and 1/2 of a grapefruit for breakfast, a chicken salad for lunch and the most delisious Honey-Mustard chicken for dinner with some rice and a

salad.  I am not sure if I ate enough today but I only ate when I was hungry.  I am sure it will all catch up with me tomorrow.

All in all I am feeling pretty great.  I guess that in a lot of ways I am feeling proud of myself.  I am believing in myself.  It is something I have not felt in a long time.  I have still not weighed myself.  I will weigh in on Saturday when we hit one week in.  I am hoping for good things to happen.  If the scale disappointed me with no weight loss, I will know that it is not because I have not worked hard this week.  I have agreed to be patient with myself.  I did not gain all of this weight in a week and I will not loose it in a day.

I also started a facebook group where anyone is welcome for support, recipe ideas, exercise routines.  It is a place where we can all come together and loose.  The group is Becca’s Belly Busters.

Weight Loss: Day three

Well here we are with the third day down.  It seems as if this has all been too easy.  I am usually much more obsessive by now.  I have usually weighed myslef about a million times by now.  I have usually eaten some chocolate by now.  As I stated yesterday, this seems different.  It is not motivation that I have.  It is just that I know I need this.  It is that it feels right.  So here is how the day went

I went for a walk with Abigail and our new dog.  It was better then I had expected.  I lived through it and because of my new shoes my foot that hurts ALL of the time.  It all went so well that I chose to walk again this evening.  I will be waking up again tomorrow to repeat my walk.

As far as eating today I did wonderfully.  I had a shake for breakfast, a chicken sandwich for lunch with fruit and pretzels and tuna caserole with salad and broccoli for dinner.   I think that all in all that is a wonderful day.

Tomorrow is day 4.  I am proud to say that I have my meals all planned out and that I am ready.  I hope you are all doing as well as I am.

Pirate Cake

Simple pirate cake!

Simple pirate cake!

No pirate party is complete without a pirate hat cake.  This cake was so simple and so fun.  It is a must for any pirate party!

Here’s how I did it:

  1. Bake 2 round cakes
  2. Let the cakes cool
  3. Ice the top of one cake
  4. Place the second cake on top of the first
  5. Cut about 1/4 of the circle off
  6. Cut the smaller piece in half
  7. Place cake up vertically
  8. Ice and decorate

The Art of The Gingerbread House

As a child the thing that has always amazed me was my Grandmother’s gingerbread houses. I always thought that it was so awesome that there was a little house that you could eat. I remember being young and just staring at all of the figures and candy and Santa on the roof. Still to this day Grandma, now in her 80′s, makes her Gingerbread house each and every year. You know what? Still to this day it aamazes me.

Being that I have always been so interested in gingerbread houses I figured it was something I would like to do for my kids. I quickly learned that it was not just a simple throwing together of some big ginger cookies. It was REALLY hard. Now when I tell you it was hard here is what I tried. A few years ago Rob, the husband, and I bought one of those little gingerbread house kits and went to work. I was so frusterated about 10 minutes into it that I had to walk away. Of course Rob, being a chef, had to finish and make it look just wonderful. I sat there thinking that my Grandmother was the most amazing person ever because she did this each and every year for as long as I can remeber and as long as my father could remember.

So here I am thinking about this ideal Christmas that I wish to have and in it I think I want another Gingerbread house. Now this year I will not be going out and buying a kit. I think that they are harder then one may think when they put their $9.99 down on the counter. I was to bake the gingerbread and make the glue that holds it all together. Perhaps I will call Grandma up and ask for her help. She would be so honored that someone was willing to keep up her tradition. Since it has been about 5 years since my last attempt perhaps I will find it easier this time. The one thing that I did learn was that it is alright to mess up. All you have to do is put a little sugar glue and it will all be better. It reminds me of the AT&T commercial from last years with the gingerbread dad who is just trying to fix his roof. In the end someone rips off the whole roof and the wife is in the bathtub screaming… It was so cute.

The point is that I think that I can do it and that I am certainly willing to give it a good effort. I will certainly let you know how it goes closer to the time. If anyone would like to send on some tips that would be great!

Christmas Cookie Baking Tips

As time gets closer I think that it is important to examine some tips to assure that your Christmas cookies will be the best that they can be.  My mother-in-law, Linda, is the cookie queen.  She has taught me most of what I know about baking cookies.  Some tips are from her and some are things that I have learned over time.  It is important to me that my cookies come out right for various reasons.  As I posted earlier I would like to use cookies as gifts for various people on my list.  I also love to watch the kids get all excited about a plate of cookies.  We also can not let Santa down.  He really likes his cookies and I want them to turn out just right. So here are the tips that I have.  If they are followed you should have nothing but perfect cookies this Christmas.

  1. Test your oven.  A few days or weeks before you plan on baking it is important to test your oven to assure that your oven is holding the proper temperature.  This can be done by buying a thermometer in the grocery store for a few dollars.  This will help you to see if your oven is truly at the proper temperature.
  2. Preheat your oven to the desired temperature.  This is a vital step.  I honestly used to ignore this one.  There is actually a reason that they say to preheat the oven.   Preheating assures that your cookies will cook evenly in the
    amount of time indicated on the recipe.
  3. Measuring matters:  While baking it is important to remember not to eye your ingredients.  While this is an acceptable method while cooking it can be a tragic mistake while baking.  Make sure that you measure with measuring cups.
  4. Use shiny aluminum cookie sheets.  This is important to remember.  Dark pans tend to hold heat longer and will burn your cookies.  A Linda hint is top buy new pans each Christmas.
  5. Make sure that your pans are cooled after each batch.  Linda also says that it is important to rinse the tray and dry it well between each batch.
  6. Do NOT grease your cookie sheets.  Unless the recipe says that you need a greased pan do NOT grease your pan.  This will burn the bottoms of your cookies.
  7. Leave about 2 inches between each cookie.  If the cookies are large you may want to leave some more room.
  8. Cookie Racks.  I bought these last year and have decided that they are a must have while baking cookies.  Without a wire cookie rack your cookies will be soggy nd who wants a soggy, wet cookie?  I know that I do not.

So there you have it.  Some simple and easy ways to assure that your cookies come out just right.  I will post some pictures closer to the time of our cookie baking days with the kids.  It should be a great time and the cookies should come out perfect.  If you have a tip I would love to hear it!
