Grandma’s Magic Cookie Bars

Another favorite in our family are magic cookie bars.  They have a special grandma touch that makes them extra gooey!  Magic cookie bars are sure to please everyone young and old!  Here is what you will need to do to make Grandma’s Magic Cookie Bars:

Ingredient:

1/2 Cup of Butter

1 and 1/2 Cups graham cracker crumbs

1 and 1/2 (21 oz.) cans of condensed milk

2 Cups Semi-Sweet Chocolate Chips

1 and 1/3 Cups of flaked Coconut

1 Cup Chopped Nuts

Directions:

  1. Preheat your oven to 350 degrees (325 degrees for a glass dish)
  2. Melt butter
  3. Pour the butter into a 13×9 inch pan
  4. Add crumbs over the butter
  5. Pour the milk evenly over the crumbs
  6. Layer remaining ingredients evenly
  7. Press down firmly with a fork
  8. Bake at 350 degrees for 25 minutes or until you notice a slight browning of the magic cookie bars.
  9. Chill in the pan over a cooling rack
  10. Cut into bars and serve

One thing to note is that this recipe calls for more condensed milk than other recipes.  It makes the magic cookie bars extra gooey.  If you wish to have a drier bar only use 1 (14 oz.) can of milk.

I Am Back!

I realize I have been a little absent this past few weeks.  I think that the heat got to me a little.  In addition to the three 90 degree heat wave we had I have also been bogged down with Girl Scouts.  Cookies came in last week.  Daisies sold 81 cases of Girl Scout cookies.  Yes I said cases.  I have to say that there was a lot of help from other parents and most parents came and took it all out of my house within a few days.  It was nice that they were all considerate enough to notice that they would be in my way!

Over the weekend we added a new family member whom I will post more about tomorrow.  In addition to that we had ballet and a sleepover with three additional girls.  Oh and did I mention that the baby (who will be two in May) had a 104 degree fever all weekend.  It has been a lot of fun!

Either way I am back.  It is a lot cooler the past two days and the baby is feeling a lot better.  I hate when life gets in the way of blogging but it happens.  Thanks for checking in with me!

Christmas Cookie Baking Tips

As time gets closer I think that it is important to examine some tips to assure that your Christmas cookies will be the best that they can be.  My mother-in-law, Linda, is the cookie queen.  She has taught me most of what I know about baking cookies.  Some tips are from her and some are things that I have learned over time.  It is important to me that my cookies come out right for various reasons.  As I posted earlier I would like to use cookies as gifts for various people on my list.  I also love to watch the kids get all excited about a plate of cookies.  We also can not let Santa down.  He really likes his cookies and I want them to turn out just right. So here are the tips that I have.  If they are followed you should have nothing but perfect cookies this Christmas.

  1. Test your oven.  A few days or weeks before you plan on baking it is important to test your oven to assure that your oven is holding the proper temperature.  This can be done by buying a thermometer in the grocery store for a few dollars.  This will help you to see if your oven is truly at the proper temperature.
  2. Preheat your oven to the desired temperature.  This is a vital step.  I honestly used to ignore this one.  There is actually a reason that they say to preheat the oven.   Preheating assures that your cookies will cook evenly in the
    amount of time indicated on the recipe.
  3. Measuring matters:  While baking it is important to remember not to eye your ingredients.  While this is an acceptable method while cooking it can be a tragic mistake while baking.  Make sure that you measure with measuring cups.
  4. Use shiny aluminum cookie sheets.  This is important to remember.  Dark pans tend to hold heat longer and will burn your cookies.  A Linda hint is top buy new pans each Christmas.
  5. Make sure that your pans are cooled after each batch.  Linda also says that it is important to rinse the tray and dry it well between each batch.
  6. Do NOT grease your cookie sheets.  Unless the recipe says that you need a greased pan do NOT grease your pan.  This will burn the bottoms of your cookies.
  7. Leave about 2 inches between each cookie.  If the cookies are large you may want to leave some more room.
  8. Cookie Racks.  I bought these last year and have decided that they are a must have while baking cookies.  Without a wire cookie rack your cookies will be soggy nd who wants a soggy, wet cookie?  I know that I do not.

So there you have it.  Some simple and easy ways to assure that your cookies come out just right.  I will post some pictures closer to the time of our cookie baking days with the kids.  It should be a great time and the cookies should come out perfect.  If you have a tip I would love to hear it!

62 Days Until Christmas

Saving money on gifts.

Every year we spend a lot of time and money on sibling presents for my in-laws. There are 6 of us total now and it ends up being at least $200 if not more. I had suggested that this year we do something a little different. All of us are strapped for cash this year. Adding $200 for adult presents just did not seem all that important to me. I would rather each of us focus on the kids and making this holiday season special.

So what is a family to do? This year the adult siblings are going to do fun gifts. We have a $5 limit I am looking forward to this as I love to fine gifts that do not cost a lot but are worth a lot or have value.The savings on the will help a lot and that makes me happy.The amount of stress this relives is awesome, as getting money for all these gifts when I am worrying about heating my home.

What can you do with 5 dollars well if you pool all the money togeather you have about 30 bucks.
So one idea i had was to to get some maison jars and layer in all the dry goods for cookies and attach the recipe.

Makes about 48

1 tsp. salt
1 tsp. baking soda
2 cups flour
1 cup brown sugar
1/2 cup sugar
1-1/2 chocolate chunks

Mix the white ingredients, then put then in the bottom of the jar, than add the brown sugar and end with the chips. Decerate with some Calico place over lid with a rubber band add ribbon cover rubber band.

Don’t forget to attach card with the following instructions:

Cookies in a Jar

Store jar in a cool, dark place for up to 3 months.
contents of this jar

1 cup unsalted butter or margarine
1 large egg
1 teaspoon vanilla

Preheat oven to 375 degrees F. Separate the chocolate chips from other ingredients use a colander. Beat butter until creamy. Add sifted ingredients into butter. In a small bowl, beat egg with vanilla. Add egg mixture into butter mixture until blended well. Stir in chocolate chunks. Use a teaspoonfuls of batter, spaced 2 inches apart , onto a lightly greased cookie sheet. Bake 8 minutes. Than place on a cooling rack!!!!
